  • ½ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract

  • ½ teaspoon fine sea salt
  • 3 tablespoons black cocoa powder
  • ½ cup semi-sweet chocolate chips, melted
  • ¼ cup white chocolate chips, melted (optional)
  • Orange or green candy eyes (optional)
  • Black licorice strings (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-inch round pizza pan or baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes with an electric mixer.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and black cocoa powder.
  5. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Chill the dough in the refrigerator for 15-20 minutes (optional but recommended).
  7. Transfer the dough to the prepared pan. Using your hands or a spatula, press it into a circle about ½-inch thick.
  8. Pinch off two small pieces of dough (about the size of a golf ball each), roll them into triangles, and attach them to the top of the circle to form cat ears. Press gently to seal.
  9. Bake for 18-22 minutes, until the edges are golden brown and set but the center still looks slightly soft.
  10. Cool completely on the pan for at least 20 minutes before decorating.
  11. While the cookie cools, melt the semi-sweet chocolate chips in the microwave in 20-second intervals, stirring between each, until smooth. Repeat with white chocolate chips if using.
  12. Decorate the cooled cookie cake with melted chocolate to create cat face details (eyes, nose, whiskers). Add candy eyes or licorice whiskers if desired.

Notes

For best results, chill the shaped dough for 10 minutes before baking to help the ears hold their shape. Don’t overbake; the center should still jiggle slightly when you shake the pan. The cookie tastes even better the next day as flavors meld. For a deeper black color, use black cocoa powder; if unavailable, use regular unsweetened cocoa powder plus a few drops of black gel food coloring.
