This Homemade Cinnamon Sugar Apple Fritter Bread captures all the cozy, caramelized edges of a fritter in a simple quick bread that doesn’t require deep frying. It has a tender, moist crumb with pockets of soft, jammy apple and a crackly cinnamon sugar crust on top.

  • ⅓ cup granulated sugar (65g)
  • 1½ teaspoons ground cinnamon

  • ½ teaspoon salt (3g)
  • ½ cup unsalted butter (113g), softened to room temperature
  • ⅔ cup granulated sugar (130g)
  • 2 large eggs, room temperature
  • 1½ teaspoons vanilla extract (7ml)
  • ½ cup milk (120ml), room temperature
  • ⅓ cup granulated sugar (65g) (for swirl & topping)
  • 1½ teaspoons ground cinnamon (for swirl & topping)
  • 2 tablespoons melted butter (28g) (for brushing after baking)

Instructions

  1. Prep the Apples: Peel, core, and dice apples into ½-inch cubes. In a medium bowl, toss diced apples with ⅓ cup sugar, 1½ teaspoons cinnamon, and a pinch of nutmeg. Let sit while preparing batter.
  2. Preheat and Prepare the Pan: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with a parchment paper sling, leaving about 2 inches overhang on the long sides.
  3. Mix the Dry Ingredients: In a medium bowl, whisk together 1½ cups all-purpose flour, 1½ teaspoons baking powder, and ½ teaspoon salt. Set aside.
  4. Cream the Butter and Sugar: In a large bowl, beat ½ cup softened butter and ⅔ cup granulated sugar together until light and fluffy, about 3 minutes with a hand mixer on medium speed.
  5. Add Eggs and Vanilla: Add the 2 room-temperature eggs one at a time, beating well after each addition. Mix in 1½ teaspoons vanilla extract.
  6. Alternate Flour and Milk: With mixer on low speed, add flour mixture in three additions, alternating with milk in two additions, starting and ending with flour. Mix just until combined. Use a rubber spatula to fold gently from the bottom.
  7. Layer the Batter and Apples: Pour half the batter into prepared loaf pan and spread evenly. Spoon about two-thirds of the cinnamon-sugar apple mixture over the batter. Pour remaining batter on top, gently spreading to cover apples. Spoon remaining apples on top, pressing gently into batter.
  8. Make the Cinnamon Sugar Swirl: In a small bowl, mix together ⅓ cup sugar and 1½ teaspoons cinnamon. Sprinkle about three-quarters of this mixture evenly over the top. Use a butter knife to gently swirl into the top layer.
  9. Bake: Place pan on middle rack of preheated oven. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent loosely with foil after about 35 minutes.
  10. The Final Touch: Let bread cool in pan for 15 minutes. While still warm, brush top with 2 tablespoons melted butter, then sprinkle remaining cinnamon sugar over the top. Let cool completely in pan on a wire rack, about 1 hour, before slicing.

Notes

For best results, use room temperature ingredients. Don’t overmix the batter. Let the bread cool completely before slicing to prevent crumbling. The bread tastes even better on day two as flavors meld.
