This easy homemade pumpkin spice latte syrup is made with simple ingredients and comes together in about 20 minutes. It’s perfect for adding cozy fall flavor to your coffee, and it’s naturally dairy-free and vegan.

  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup pumpkin puree (100% pure pumpkin)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of black pepper
  • Pinch of salt

Instructions

  1. Combine the sugars and water: In a medium saucepan, add the water, granulated sugar, and brown sugar. Place over medium heat and stir gently with a whisk until the sugars dissolve, about 2-3 minutes.
  2. Add the pumpkin and spices: Once the sugar mixture is clear and bubbling slightly, whisk in the pumpkin puree, pumpkin pie spice, black pepper, and salt. Keep whisking until fully combined, about 2 minutes.
  3. Bring to a simmer: Increase heat to medium-high and bring the mixture to a gentle simmer. Let it simmer for 5-7 minutes, stirring occasionally. The syrup will thicken slightly.
  4. Remove from heat and add vanilla: Take the pot off the stove and stir in the vanilla extract. Let the syrup cool in the pot for about 10 minutes.
  5. Strain (optional but recommended): Place a fine-mesh strainer over a glass measuring cup or storage jar. Pour the syrup through the strainer, using a spatula to press any liquid through. Discard solids.
  6. Transfer to jar: If using a measuring cup, pour the strained syrup into a jar using a funnel. Let it cool completely at room temperature before putting the lid on.
  7. Refrigerate: Once fully cool, seal the jar and refrigerate. The syrup will keep for up to 2 weeks.

Notes

For a dairy-free or vegan version, no changes needed—this syrup is naturally plant-based. If watching sugar intake, substitute with coconut sugar or monk fruit blend, though texture will be slightly grainier. The syrup freezes well in ice cube trays for easy use. Flavors improve after a day in the fridge.
