  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • 12 slider buns (brioche preferred)
  • 2 tablespoons unsalted butter, melted
  • Optional toppings: pickled jalapeños, shredded cheddar, fresh cilantro

Instructions

  1. Make the meatball mixture: In a large mixing bowl, combine ground beef, breadcrumbs, milk, beaten egg, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined.
  2. Form the meatballs: Using a cookie scoop or your hands, portion the mixture into 12 equal-sized balls, about 1.5 inches (4 cm) in diameter. Roll gently and place on a parchment-lined plate or baking sheet.
  3. Brown the meatballs: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add meatballs in a single layer and cook for 3-4 minutes per side, turning with tongs, until all sides are browned (about 8-10 minutes total). Alternatively, bake at 400°F (200°C) for 12 minutes.
  4. Simmer the sauce: In a small saucepan, combine BBQ sauce, honey, apple cider vinegar, smoked paprika, and cayenne. Whisk over medium heat until honey dissolves and sauce bubbles. Reduce heat to low and simmer for 2-3 minutes, stirring occasionally.
  5. Glaze the meatballs: Pour the honey BBQ sauce over the browned meatballs in the skillet. Toss gently to coat. Simmer for 5-7 minutes, turning once, until sauce is sticky and meatballs are cooked through (internal temperature 160°F/71°C).
