  • 2 tablespoons honey (preferably local, raw honey)
  • 3 tablespoons Dijon mustard (smooth and tangy)
  • 2 tablespoons apple cider vinegar
  • 1/3 cup extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika or dash of garlic powder

Instructions

  1. Measure out 2 tablespoons honey, 3 tablespoons Dijon mustard, 2 tablespoons apple cider vinegar, 1/3 cup extra virgin olive oil, 1/4 teaspoon sea salt, and 1/8 teaspoon black pepper.
  2. In a mixing bowl, whisk together the honey and Dijon mustard until smooth.
  3. Pour in the apple cider vinegar and whisk again until mixture brightens in color.
  4. Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing.
  5. Add sea salt and freshly ground black pepper, whisking to blend. Taste and adjust seasoning if needed.
  6. Optionally, add a pinch of smoked paprika or garlic powder and whisk again.
  7. Let the dressing rest at room temperature for 5-10 minutes to meld flavors.
  8. Store in a jar with a tight lid in the refrigerator if not using immediately. Shake well before each use.

Notes

Whisk the olive oil in slowly to emulsify properly. Use good quality Dijon mustard for best flavor. Let the dressing rest before serving to meld flavors. If thickened in fridge, stir in a teaspoon of warm water to loosen. Shake or whisk before each use as separation is normal.
