  • 4 flour tortillas (8-inch size; whole wheat or gluten-free optional)
  • 1 cup guacamole (store-bought or homemade)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup finely chopped tomatoes
  • 1/4 cup diced red onions
  • 1/4 cup chopped cilantro
  • 1 small jalapeño, finely diced (optional)
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine guacamole, tomatoes, red onions, cilantro, jalapeño, smoked paprika, lime juice, salt, and pepper. Stir gently to mix without mashing the guacamole.
  2. In a small bowl, soften the cream cheese until smooth using a fork or spatula. Microwave for 10 seconds if needed.
  3. Place one tortilla flat on a clean surface. Spread a thin, even layer of cream cheese over the entire tortilla, leaving about a half-inch border.
  4. Spoon about 2 tablespoons of the guacamole mixture evenly over the cream cheese layer. Spread gently without overfilling.
  5. Sprinkle about 1 tablespoon of shredded cheddar cheese over the guacamole layer.
  6. Roll the tortilla tightly from one edge into a snug log. Wrap each roll tightly in plastic wrap and refrigerate for at least 15 minutes.
  7. Unwrap and slice each roll into 1-inch pinwheels using a sharp serrated knife. Arrange on a serving plate and garnish with extra cilantro or smoked paprika if desired.

Notes

If tortillas are stiff, microwave wrapped in a damp paper towel for 10-15 seconds to soften. Do not overfill tortillas to prevent bursting. Chill roll-ups before slicing for cleaner cuts. Use serrated knife and gentle sawing motion to slice. Can be made ahead and stored refrigerated up to 2 days. For vegan option, substitute cream cheese and cheddar with plant-based alternatives.
