Ingredients

Scale
  • 1 lb (450g) ground beef (80/20)
  • 1 packet (1 oz) taco seasoning
  • 1 can (16 oz) refried beans
  • 1 block (8 oz) cream cheese, softened
  • 1/2 cup sour cream (for the base)
  • 2 cups (8 oz) shredded Mexican blend cheese
  • 1 cup (4 oz) shredded cheddar cheese
  • 1 cup sour cream (for yard lines)
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 cup diced Roma tomatoes (seeded)
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • Optional: pretzel sticks or churro sticks for goalposts
  • Large tortilla chips (e.g., Tostitos Scoops!) for serving

Instructions

  1. Preheat oven to 375°F (190°C). Dice tomatoes, chop lettuce, and slice olives.
  2. In a large skillet over medium-high heat, cook ground beef until no longer pink (6-8 minutes). Drain excess fat.
  3. Reduce heat to low. Add taco seasoning and 1/2 cup water. Simmer 2-3 minutes until thickened. Set aside.
  4. In a small bowl, mix softened cream cheese and 1/2 cup sour cream until smooth.
  5. Spread refried beans evenly in a 9×13-inch baking dish. Spread cream cheese mixture over beans.
  6. Evenly distribute seasoned ground beef over cream cheese layer.
  7. Sprinkle Mexican blend cheese and cheddar cheese over the meat.
  8. Bake for 15-20 minutes until cheese is melted and bubbly.
  9. While baking, place remaining 1 cup sour cream in a piping bag or zip-top bag with a small corner snipped off.
  10. Let dip rest for 5 minutes after baking.
  11. Pipe five parallel sour cream lines across the dish for yard lines (two at each end, one in center).
  12. Sprinkle shredded lettuce evenly over the cheese.
  13. Arrange diced tomatoes in small clusters between yard lines (players). Scatter black olives (footballs). Sprinkle green onions.
  14. If using, press pretzel sticks into one end for goalposts.
  15. Serve immediately with sturdy tortilla chips.

Notes

Let the dip rest for 5 minutes after baking to prevent cold toppings from wilting. Pat lettuce and tomatoes dry to avoid sogginess. For a make-ahead option, assemble without cold toppings up to 24 hours in advance and bake just before serving.
