  • 1 cup fresh spinach (thawed and thoroughly squeezed dry if frozen)
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons heavy cream or milk
  • 1/4 cup shredded cheddar or Gruyère cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooking spray or olive oil (for greasing muffin tin)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin generously with cooking spray or olive oil.
  2. Wash fresh spinach thoroughly. If using frozen, thaw completely. Place spinach in a clean kitchen towel and squeeze tightly to remove all excess moisture.
  3. In a large mixing bowl, whisk eggs, heavy cream (or milk), garlic powder, salt, and black pepper vigorously until uniform and slightly frothy.
  4. Gently fold in the squeezed spinach and crumbled feta cheese. Add shredded cheddar or Gruyère if using. Taste and adjust seasoning if needed.
  5. Divide the mixture evenly among the 12 muffin cups, filling each about three-quarters full. Press spinach down slightly.
  6. Bake for 18-20 minutes until edges are set and slightly golden, and centers are just set.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing.

Notes

Ensure spinach is thoroughly squeezed dry to prevent soggy muffins. Do not overbake as eggs continue to cook from residual heat. Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in microwave for 30-60 seconds.
