This easy maple glazed roasted delicata squash is a simple, delicious side dish that comes together in under 30 minutes. The skin is thin and edible, and the maple glaze caramelizes into a sticky-sweet coating that’s absolutely addictive.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (freshly grated if possible)
  • ⅛ teaspoon cayenne pepper (optional)
  • 45 fresh thyme sprigs (optional)
  • Flaky sea salt for finishing (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place the rack in the middle position.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Wash the delicata squash thoroughly and pat dry.
  4. Cut the squash in half lengthwise, then scoop out the seeds and stringy pulp.
  5. Slice each squash half crosswise into ½-inch thick half-moons.
  6. In a small bowl, whisk together maple syrup, olive oil, melted butter, kosher salt, black pepper, cinnamon, nutmeg, and cayenne pepper (if using).
  7. Place the squash slices in a large mixing bowl, pour the glaze over them, and toss gently until every piece is coated.
  8. Arrange the squash in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  9. Roast for 15 minutes.
  10. Remove the baking sheet from the oven and flip each slice using a metal spatula.
  11. If using fresh thyme, scatter the sprigs over the squash.
  12. Roast for another 10-15 minutes, until the squash is tender and the edges are deep golden brown and caramelized.
  13. Remove from the oven and let cool on the baking sheet for 2-3 minutes.
  14. Sprinkle with flaky sea salt just before serving.

Notes

Don’t skip flipping the squash halfway through for even caramelization. Use a hot oven (400°F) and avoid overcrowding the pan. Let the squash cool slightly before serving to allow the glaze to set. Save the seeds to roast as a snack.
