  • 2 cups cooked chicken breast or rotisserie chicken, shredded or diced
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded Parmesan cheese
  • 1 cup croutons
  • ½ cup mayonnaise
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced
  • 1 tsp anchovy paste (optional)
  • Salt and freshly ground black pepper, to taste
  • 23 tbsp water

Instructions

  1. Prepare the Caesar dressing: In a small bowl, whisk together ½ cup mayonnaise, 2 tbsp grated Parmesan, 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, minced garlic, and anchovy paste if using. Add 2-3 tbsp water gradually to thin the dressing to a pourable consistency. Taste and season with salt and pepper. This should take about 5 minutes.
  2. Chop the romaine lettuce: Rinse and dry the lettuce thoroughly. Chop into bite-sized pieces—about 6 cups. Drying is crucial to avoid sogginess. This step takes around 5 minutes.
  3. Prep chicken and veggies: Shred or dice 2 cups of cooked chicken breast or rotisserie chicken. Halve 1 cup of cherry tomatoes. Grate ½ cup Parmesan cheese if not pre-shredded. This should take 5-7 minutes.
  4. Layer the salad in mason jars: Start with 2-3 tbsp of Caesar dressing at the bottom of each jar. Next, add cherry tomatoes, then chicken, followed by Parmesan cheese, then croutons, and finally top with chopped romaine lettuce. Each jar should hold about 16 oz (475 ml). Takes about 10 minutes.
  5. Seal and refrigerate: Screw lids tightly on jars and store in the fridge. These salads keep well for up to 4 days. When ready to eat, shake the jar vigorously to distribute the dressing and enjoy straight from the jar or pour onto a plate.

Notes

Keep lettuce dry to avoid sogginess. Layer dressing at the bottom and lettuce on top to maintain freshness. Add fresh croutons just before eating for maximum crunch. Shake jar well before eating. Dressing can be thinned with water or thickened with more mayo or Parmesan as needed. Salad keeps up to 4 days refrigerated. Reheat chicken separately if desired.
