  • ½ cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • ¼ cup dark chocolate chips (optional)

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, ½ cup shredded coconut, 2 tablespoons chia seeds, and a pinch of salt. Stir together until evenly distributed.
  2. Add the wet ingredients: Spoon in ½ cup peanut butter and ⅓ cup honey. If using chocolate chips, add them now. Stir until uniformly combined and no dry patches remain. The dough will be thick and slightly sticky. If too dry, add a teaspoon of honey or water; if too wet, add a tablespoon of oats.
  3. Chill the mixture (optional but recommended): Pop the bowl in the fridge for 15-20 minutes to firm up the dough, making it easier to roll.
  4. Roll into balls: Using slightly damp hands, scoop about 1 tablespoon of the mixture and roll into a tight ball. Place each ball on a parchment-lined baking sheet or plate. Repeat until all dough is used (about 18-20 bites).
  5. Let them set: Refrigerate the tray for at least 30 minutes to allow the chia seeds to hydrate and flavors to meld.
  6. Store and enjoy: Transfer to an airtight container and keep in the refrigerator for up to 2 weeks. They can also be frozen for up to 3 months.

For best texture, chill the bites for at least 30 minutes. Toast the coconut for extra flavor. Adjust sweetness to taste. Use room temperature ingredients for easier mixing. Double the recipe for a larger batch.
