  • 1 teaspoon vanilla extract
  • ¼ cup (43 g) mini chocolate chips (optional)
  • A pinch of sea salt

Instructions

  1. In a mixing bowl, combine 1½ cups rolled oats, 2 tablespoons ground flaxseed, 1 tablespoon chia seeds, and a pinch of sea salt. Stir briefly to blend evenly (about 2 minutes).
  2. Add ½ cup almond butter, ⅓ cup honey, and 1 teaspoon vanilla extract to the dry mix. Stir with a spoon or spatula until a sticky dough forms (3-4 minutes). If too crumbly, add a teaspoon more honey or almond butter.
  3. Fold in ¼ cup mini chocolate chips if using.
  4. Roll the mixture into small balls about 1 inch in diameter, yielding roughly 15-18 bites. Dampening hands with water can help prevent sticking.
  5. Place the bites on a baking sheet or plate lined with parchment paper and chill in the fridge for at least 30 minutes to firm up.
  6. Store the chilled bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
