  • 1 tablespoon (12 g) chia seeds (optional)
  • 1/2 teaspoon (1 g) cinnamon (optional)
  • 1/4 cup (45 g) mini dairy-free chocolate chips (optional)

Instructions

  1. Combine the wet ingredients: In a mixing bowl, scoop 1 cup (240 ml) of smooth sunflower butter and 1/4 cup (85 g) of honey. Add 1 teaspoon (5 ml) of vanilla extract. Stir gently to blend them together until smooth and creamy, about 2 minutes.
  2. Add the dry ingredients: To the wet mixture, add 1 1/2 cups (135 g) of rolled oats, 2 tablespoons (14 g) ground flaxseed, 1 tablespoon (12 g) chia seeds (if using), and 1/2 teaspoon (1 g) cinnamon. Mix thoroughly until everything is evenly combined. The texture should be sticky but pliable. If it feels too dry, add a splash of water or a bit more honey, one teaspoon at a time.
  3. Fold in chocolate chips: Gently fold in 1/4 cup (45 g) mini dairy-free chocolate chips, if using.
  4. Form the energy bites: Using a small cookie scoop or tablespoon, scoop out the mixture and roll it between your palms to form bite-sized balls, about 1 inch (2.5 cm) in diameter. You should get roughly 15–18 bites.
  5. Chill and set: Place the formed bites onto a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up and hold their shape.
  6. Serve or store: Once firm, transfer the bites to an airtight container. Enjoy immediately or store for later.
