A quick and flavorful weeknight dinner featuring browned bratwurst, caramelized onions, and tangy sauerkraut deglazed with beer. This one-pan meal balances tradition with modern convenience for a hearty, comforting result.

  • 1 lb Bratwurst or German Sausage
  • 2 medium Yellow Onions, thinly sliced
  • 1 tbsp Butter (or olive oil for dairy-free)
  • 3 cloves Garlic, minced
  • 1 tsp Caraway Seeds
  • 14 oz Sauerkraut, drained, rinsed, and squeezed dry
  • 1/2 cup Lager or Pilsner beer (or beef broth)
  • 1 tbsp Dijon Mustard
  • Salt and Black Pepper to taste

Instructions

  1. Slice the sausages into thick coins or leave whole. Thinly slice the onions and mince the garlic. Drain, rinse, and squeeze the sauerkraut dry to remove excess liquid.
  2. Heat a large skillet over medium-high heat. Add butter and let it melt. Once foaming stops, add sausages and cook for 3-4 minutes per side until browned and crispy. Remove to a plate, leaving rendered fat in the pan.
  3. Reduce heat to medium. Add sliced onions and a pinch of salt to the pan. Cook for 8-10 minutes, stirring occasionally, until golden brown and soft.
  4. Add minced garlic and caraway seeds to the onions. Stir constantly for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Return sausages to the pan. Add the drained sauerkraut on top. Pour in the beer and stir in the Dijon mustard, scraping up any browned bits from the bottom of the pan.
  6. Simmer uncovered for 3-5 minutes until the liquid reduces slightly and coats the ingredients. Taste and adjust seasoning with black pepper. Serve immediately.

Notes

Ensure sauerkraut is squeezed dry to prevent a watery dish. Do not rush the caramelization of onions as it builds flavor. If sausages are thick, slice them lengthwise before browning. For a non-alcoholic version, substitute beer with beef broth or apple cider vinegar mixed with water.
