  • 2024 fresh mozzarella balls (bocconcini or ciliegine)
  • 2024 fresh basil leaves
  • 1 cup (240 ml) balsamic vinegar
  • 2 tablespoons (30 ml) honey or brown sugar
  • Extra virgin olive oil, for drizzling (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Wooden skewers or toothpicks (about 6 inches long)

Instructions

  1. Make the Balsamic Glaze: Pour 1 cup (240 ml) of balsamic vinegar into a small saucepan over medium heat. Add 2 tablespoons (30 ml) of honey or brown sugar. Bring to a gentle boil, then reduce heat to low. Let it simmer, stirring occasionally, until it thickens to a syrupy consistency—about 10-15 minutes. Remove from heat and set aside to cool.
  2. Prepare the Ingredients: Rinse the cherry tomatoes and basil leaves under cold water. Pat dry. If using larger heirloom tomatoes, cut them into bite-sized pieces. Drain the fresh mozzarella balls and gently pat them dry to avoid excess moisture.
  3. Assemble the Skewers: Thread one cherry tomato, followed by a folded basil leaf, then a mozzarella ball, and finish with another cherry tomato for a red-white-red look. Repeat until all skewers are assembled (20-24 pieces).
  4. Season the Skewers: Arrange the skewers on a serving platter. Lightly sprinkle with salt and freshly cracked black pepper.
  5. Finish with Glaze and Olive Oil: Drizzle the cooled balsamic glaze evenly over the skewers. Add a light drizzle of extra virgin olive oil if desired.
  6. Serve Immediately or Chill: Serve fresh or refrigerate for up to 2 hours before serving. Bring to room temperature for best flavor.
