  • 4 oz (115 g) cream cheese, softened
  • 3 ½ cups (420 g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 2 tbsp heavy cream (optional, for smoothing consistency)
  • Gel food coloring in red and blue

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In a separate bowl, whisk melted butter, eggs, milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined; some lumps are okay.
  5. Fill cupcake liners about ⅔ full (about ⅓ cup or 80 ml batter per cupcake).
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs.
  7. Cool cupcakes in the tin for 5 minutes, then transfer to a wire rack to cool completely (about 1 hour).
  8. For the frosting, beat softened butter and cream cheese on medium speed until creamy and smooth (2-3 minutes).
  9. Gradually add powdered sugar on low speed to avoid dust, then beat on medium speed until fluffy (3-4 minutes).
  10. Add vanilla extract and heavy cream if needed for consistency; beat until smooth.
  11. Divide frosting into three bowls; leave one plain (white), color one red, and one blue with gel food coloring.
  12. Spoon stripes of red, white, and blue frosting side by side into a piping bag fitted with a large round or Wilton 1M star tip.
  13. Pipe frosting onto cupcakes by holding the bag vertically and swirling from the outside edge to the center to create a tri-color swirl.
