  • About 4 large fresh peaches, peeled and sliced or 4 cups frozen peaches, thawed (600 grams)
  • ⅓ cup granulated sugar (65 grams)
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan lightly with butter or non-stick spray.
  2. In a large bowl, whisk together 2 ½ cups all-purpose flour, 1 cup granulated sugar, ½ cup brown sugar, salt, and baking powder. Add the cold, cubed butter.
  3. Cut the butter into the dry ingredients using a pastry cutter or two forks until the mixture resembles coarse crumbs with pea-sized bits of butter remaining (about 3-5 minutes).
  4. Set aside about 1 ½ cups of this crumb mixture for the topping. Press the remaining crumbs firmly and evenly into the bottom of the prepared pan. Refrigerate to firm up.
  5. In a medium bowl, toss the sliced peaches with ⅓ cup granulated sugar, 2 tablespoons cornstarch, 1 teaspoon ground cinnamon, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract until evenly coated.
  6. Remove the crust from the fridge and spread the peach filling evenly on top, being careful not to overload.
  7. Sprinkle the reserved crumb topping evenly over the peaches without pressing it down.
  8. Bake for 40-45 minutes until the topping is golden and the peach filling bubbles softly around the edges. Tent with foil after 30 minutes if browning too fast.
  9. Cool completely on a wire rack for at least an hour before slicing to help bars hold together.
