  • 8 ounces cream cheese, softened to room temperature
  • 1 tablespoon fresh dill, finely chopped

  • Zest of 1/2 lemon
  • Salt and freshly cracked black pepper, to taste
  • Optional toppings: chopped chives, smoked paprika, tiny capers

Instructions

  1. Rinse the English cucumbers under cold water and pat dry. Slice into 1/4-inch (about 6 mm) thick rounds using a sharp knife or mandoline slicer. Set aside on a paper towel to absorb excess moisture.
  2. In a mixing bowl, combine the softened cream cheese with chopped fresh dill, garlic powder, and lemon zest. Stir until smooth and evenly mixed. Season with salt and pepper to taste. If needed, soften the cream cheese further or add a splash of milk to loosen the mixture.
  3. Using a small spreading knife or offset spatula, spread about 1 teaspoon of the cream cheese mixture onto each cucumber slice. Avoid overloading to prevent slices from breaking.
  4. Sprinkle optional toppings such as chopped chives, smoked paprika, or tiny capers on some bites for added flavor and color.
  5. Arrange the cucumber bites on a serving platter and chill in the refrigerator for 10-15 minutes before serving to allow flavors to meld and cream cheese to firm up.

Notes

Use room temperature cream cheese for easier spreading. Pat cucumber slices dry to avoid soggy bites. Assemble just before serving or keep cream cheese and cucumber slices separate if prepping ahead.
