  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700 g)
  • 1 lb baby potatoes, halved (Yukon Gold or red potatoes)
  • 1 large red bell pepper, cut into chunks
  • 1 medium zucchini, sliced into thick half-moons
  • 1 medium red onion, cut into wedges
  • 1/4 cup (60 ml) balsamic vinegar
  • 3 tablespoons (45 ml) extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon (15 ml) honey or maple syrup (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine balsamic vinegar, olive oil, minced garlic, honey (if using), dried thyme, rosemary, salt, and pepper. Whisk until well blended.
  3. Add the chicken thighs to the bowl and toss thoroughly to coat each piece in the balsamic mixture. Let marinate for 10 minutes if time allows.
  4. Chop the potatoes, bell pepper, zucchini, and onion as described. Toss the vegetables in the same bowl with any leftover marinade, ensuring they’re evenly coated.
  5. Arrange the chicken thighs skin-side up on a large rimmed baking sheet, spaced evenly apart. Surround with the vegetables, spreading them out to roast instead of steam.
  6. Roast in the preheated oven for 35-40 minutes. At about the 20-minute mark, use tongs to turn the vegetables and baste the chicken with pan juices for even cooking and extra flavor.
  7. Check for doneness: chicken should reach an internal temperature of 165°F (74°C), potatoes should be fork-tender, and veggies nicely browned at the edges.
  8. Let the chicken rest for 5 minutes after removing from the oven before serving.

Notes

Pat chicken dry before marinating to ensure crispy skin. Do not overcrowd the pan to allow proper roasting and caramelization. If vegetables brown too quickly, tent loosely with foil during the last 10 minutes. For extra garlic flavor, add whole smashed cloves to the pan before roasting. Rotate the pan halfway through cooking for even heat distribution.
