  • 16 oz cream cheese, softened
  • 1 oz packet ranch seasoning mix
  • 1/2 cup hot sauce (e.g., Frank’s RedHot Original)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/4 cup buttermilk
  • Green onions for garnish (optional)

Instructions

  1. Prep the chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks. If using raw chicken breasts, boil in water for 15-20 minutes until cooked through, then shred. You should have about 3 cups.
  2. Soften the cream cheese: Remove from fridge 30 minutes before starting, or microwave in cubes for 15-20 seconds.
  3. Mix the creamy base: In a medium bowl, combine softened cream cheese, ranch seasoning, and hot sauce. Blend with a hand mixer or whisk until smooth and creamy.
  4. Combine in slow cooker: Spray a 3-4 quart slow cooker with non-stick spray. Add shredded chicken, cream cheese mixture, and 1 cup of cheddar cheese. Stir until chicken is well coated.
  5. Add liquid: Pour in buttermilk and stir again. If too thick, add a splash more buttermilk or milk.
  6. Cook on low: Cover and cook on LOW for 2 hours. Stir after 1 hour to ensure even heating.
  7. Add final cheese: After 2 hours, sprinkle remaining 1/2 cup cheddar and mozzarella on top. Cover and cook for another 10-15 minutes until cheese is melted and gooey.
  8. Garnish and serve: Switch to WARM setting. Sprinkle with sliced green onions and serve directly from slow cooker with dippers.

Notes

Do not overcook; 2 hours on LOW is ideal. Shred chicken finely for best texture. Use room temperature cream cheese to avoid lumps. Adjust hot sauce to taste. If dip looks oily, stir before serving. Leftovers can be refrigerated for up to 4 days; reheat in slow cooker or microwave.
