Easy Tender Crockpot Lemon Garlic Chicken with Potatoes

A flavorful and comforting crockpot recipe featuring tender chicken thighs and garlicky lemon potatoes, perfect for busy weeknights or cozy dinners.

  • 2 pounds bone-in, skin-on chicken thighs
  • 1.5 pounds baby potatoes, halved or quartered
  • 4 cloves garlic, minced or smashed
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or thyme

Instructions

  1. Rinse and halve the baby potatoes. Place them in a mixing bowl and toss with 1 tablespoon olive oil, 1 tablespoon lemon juice, half the minced garlic, oregano, salt, and pepper until evenly coated.
  2. Spread the seasoned potatoes evenly in the bottom of the crockpot to form a bed for the chicken.
  3. Pat the chicken thighs dry with paper towels. Rub the remaining olive oil and lemon juice onto the chicken. Sprinkle with salt, pepper, and the rest of the garlic. Place lemon slices on top of each piece.
  4. Place the chicken thighs skin-side up on top of the potatoes in the crockpot.
  5. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours, until the chicken is tender and the potatoes are soft but not falling apart.
  6. Taste the sauce and adjust seasoning if needed. Sprinkle chopped fresh parsley or thyme on top for garnish. Serve warm.

Notes

Use bone-in, skin-on chicken thighs for best tenderness and flavor. If using boneless chicken breasts, reduce cooking time to 3-4 hours on low. To avoid mushy potatoes, use baby potatoes and place them under the chicken. For extra caramelization, broil chicken skin briefly before serving (optional). Leftovers store well up to 3 days in the refrigerator.
