Quick and easy turkey and cheese pinwheel roll-ups perfect for lunchboxes. Made with simple ingredients like flour tortillas, cream cheese, deli turkey, and shredded cheddar, these no-cook spirals are ready in under 10 minutes and hold up beautifully without getting soggy.

Ingredients

Scale
  • 4 (8-inch) flour tortillas
  • 4 oz cream cheese, softened
  • 68 slices deli turkey
  • ½ cup shredded cheddar cheese
  • Pinch of salt
  • Pinch of black pepper
  • Optional: mayonnaise, spinach leaves, honey mustard

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes, or microwave for 10-15 seconds.
  2. Lay out tortillas on a clean cutting board. Ensure they are at room temperature.
  3. Spread a thin, even layer of cream cheese over each tortilla, leaving a ½-inch border around the edges.
  4. Sprinkle a tiny pinch of salt and pepper over the cream cheese.
  5. Place 2-3 slices of turkey evenly over the cream cheese, overlapping slightly.
  6. Sprinkle shredded cheddar evenly over the turkey.
  7. Starting at one edge, roll the tortilla tightly toward the other edge, keeping the filling tucked in.
  8. Wrap each rolled tortilla tightly in parchment paper or plastic wrap, twisting the ends like a candy wrapper. Refrigerate for at least 15-20 minutes.
  9. Unwrap the chilled rolls and slice into 1-inch thick rounds using a sharp knife with a gentle sawing motion.
  10. Arrange pinwheels in a lunchbox container. Serve cold or at room temperature.

Notes

For best results, use room temperature cream cheese to avoid tearing tortillas. Chilling the rolls before slicing is essential for clean cuts. Make ahead the night before for an even quicker morning. Store in an airtight container with a paper towel to absorb moisture for up to 3 days.
