Quick, tasty, and easy-to-make turkey club pinwheel sandwiches perfect for busy lunches or casual gatherings. These bite-sized pinwheels combine turkey, bacon, fresh veggies, and a tangy mayo spread wrapped in soft tortillas.

  • 2 cups cooked turkey breast, diced or shredded
  • 1 cup cooked bacon strips, chopped
  • 1 cup romaine or iceberg lettuce, finely shredded
  • 4 slices tomato, thinly sliced or diced
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and black pepper, to taste
  • Optional: thinly sliced avocado or cheese (Swiss or cheddar)

Instructions

  1. In a medium bowl, combine 1/2 cup mayonnaise, 1 teaspoon Dijon mustard, and 1 teaspoon apple cider vinegar. Stir well to blend. Add a pinch of salt and pepper.
  2. Place 4 large flour tortillas flat on a clean surface. Spread about 2 tablespoons of the mayo mixture evenly over each tortilla, leaving a small border around the edge.
  3. Sprinkle roughly 1/2 cup diced turkey evenly over each tortilla, followed by 1/4 cup chopped cooked bacon.
  4. Scatter 1/2 cup shredded lettuce and thin slices of tomato (about 4 slices per tortilla) on top. Add optional avocado or cheese slices if desired.
  5. Starting at one edge, roll each tortilla tightly into a log, tucking in the filling as you go. Wrap each roll in plastic wrap and refrigerate for 20–30 minutes.
  6. Using a sharp serrated knife, cut each roll into 1-inch thick pinwheels, yielding about 8 pinwheels per tortilla.
  7. Arrange pinwheels on a platter to serve or pack into airtight containers for storage. Keep refrigerated up to 2 days.

Notes

Warm tortillas in the microwave for 15 seconds wrapped in a damp paper towel if they feel dry or brittle to make rolling easier. Chill rolled tortillas before slicing to keep pinwheels intact. Use a serrated knife with a gentle sawing motion to slice cleanly. Pat tomato slices dry if very juicy to avoid soggy pinwheels. Precook bacon ahead to save time.
