  • 1 pound thinly sliced deli turkey breast
  • 1 cup fresh spinach leaves, washed and dried thoroughly
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • 1/4 cup finely diced red bell pepper
  • 2 green onions, thinly sliced

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30-60 minutes, or microwave on low for 10-15 seconds.
  2. In a medium bowl, combine softened cream cheese and dry ranch seasoning mix. Blend until smooth using a hand mixer or sturdy spatula.
  3. Wash and thoroughly dry the spinach. Dice the red bell pepper into tiny pieces and slice the green onions thin.
  4. Lay one tortilla flat on a cutting board. Spread about 2 tablespoons of the ranch cream cheese mixture evenly across the entire surface, leaving a 1/2-inch border around the edges.
  5. Place a single layer of turkey slices over the cream cheese, overlapping slightly. Add a layer of spinach leaves, then sprinkle a little shredded cheddar, diced red pepper, and green onions over the top. Press down gently.
  6. Starting from one edge, roll the tortilla as tightly as possible without tearing. Place seam-side down on a plate or baking sheet.
  7. Repeat with remaining tortillas to make 8 rolls.
  8. Wrap the baking sheet or each roll individually in plastic wrap and refrigerate for at least 30 minutes, or up to overnight.
  9. Use a sharp knife to trim off the ragged ends (about 1/2 inch from each side), then slice each roll into 1-inch rounds. Arrange on a platter or pack into lunchboxes.
