These jello shots combine vibrant, fizzy Pop Rocks rims with sweet, boozy gelatin for a playful and memorable party treat. Perfect for festive occasions, they offer a fun explosion of flavor and texture.

  • 1 (6-ounce / 170 g) package of strawberry or cherry flavored gelatin mix
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold vodka or white rum
  • 1/2 cup (120 ml) cold water
  • 1/2 cup (100 g) granulated sugar
  • 1 packet (about 0.3 oz / 8.5 g) Pop Rocks candy
  • Optional: lemon or lime juice for wetting the rim

Instructions

  1. Pour 1 cup (240 ml) of boiling water into a medium mixing bowl. Stir in the entire gelatin packet until completely dissolved, about 2 minutes.
  2. Stir in 1/2 cup (120 ml) cold vodka or rum and 1/2 cup (120 ml) cold water. Mix gently but thoroughly to combine.
  3. On a shallow plate, mix the granulated sugar with the Pop Rocks candy gently. Wet the edges of your shot glasses with a little lemon or lime juice using a brush or your finger, then dip the rims into the Pop Rocks sugar mixture, twisting slightly to coat evenly. Set aside to dry a bit.
  4. Carefully pour the gelatin mixture into each shot glass, filling about 3/4 full to avoid overflow.
  5. Place the filled shot glasses in the refrigerator for at least 2–3 hours, or until fully set.
  6. Once set, arrange the shots on a tray with the Pop Rocks rim visible and ready to pop. Remind guests to let the rim candy crackle before taking the shot.

Notes

Rim the glasses with Pop Rocks just before serving or chilling to preserve the fizz. Chill shot glasses beforehand to help the gelatin set quickly and prevent the Pop Rocks rim from dissolving. Avoid shaking the gelatin mixture vigorously after adding alcohol to prevent grainy texture. For best texture, chill shots overnight if possible.
