  • 1 large loaf of crusty bread (1214 inches), preferably sourdough or Italian
  • ½ cup (113g) unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 cups (200g) shredded whole milk mozzarella cheese
  • 1 cup (110g) shredded sharp cheddar cheese
  • ½ cup (50g) grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it. Place the whole loaf of bread on the sheet.
  2. Using a sharp bread knife, cut the loaf diagonally in a crisscross pattern about 1-inch apart, cutting almost to the bottom but not all the way through to keep the loaf intact.
  3. In a small bowl, mix the melted butter with minced garlic, a pinch of salt, and pepper.
  4. Gently pull apart the bread sections and brush or spoon the garlic butter into every cut.
  5. Stuff shredded mozzarella and cheddar cheese into each cut and sprinkle Parmesan cheese on top. Add chopped parsley over the top for color if desired.
  6. Bake the bread in the oven for 20-25 minutes until the cheese is melted, bubbly, and the top is golden brown. Tent loosely with foil if the top browns too quickly.
  7. Remove from oven and let cool for 5 minutes before pulling apart and serving warm.

Notes

Do not cut all the way through the bread to keep it intact. Use fresh garlic for best flavor. Let the bread rest 5 minutes after baking to allow cheese to set. You can add herbs like rosemary or thyme, or spices like red pepper flakes for variation. Use crusty sourdough or Italian bread for best results. If the cheese isn’t melting well, increase oven temperature to 375°F for the last 5 minutes.
