  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, sliced

  • Honey or apricot jam, warmed and brushed over fruit for shine (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  2. Add egg and vanilla extract to the butter mixture and mix until combined.
  3. Whisk flour and salt together, then gradually add to the wet mixture. Stir just until combined; do not overmix.
  4. Transfer dough onto a greased 9-inch pizza pan. Press evenly across the pan with fingers or bottom of a glass, slightly raising edges.
  5. Bake for 15-18 minutes until edges are golden and center is set but not overly crisp. Cool completely on a wire rack.
  6. While crust cools, beat cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth and creamy, about 2-3 minutes.
  7. Spread cream cheese mixture evenly over cooled crust with an offset spatula, about ¼ inch thick.
  8. Arrange fruit to resemble the American flag: a small rectangle of blueberries in the upper left corner, horizontal stripes of strawberries and raspberries, leaving some white stripes of cookie visible.
  9. Optional: Warm honey or apricot jam and brush lightly over fruit for shine. Garnish with fresh mint leaves if desired.
  10. Refrigerate fruit pizza for at least 30 minutes before slicing and serving.
