  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil (or sesame oil for a nutty twist)
  • Pinch of ground black pepper
  • Optional garnish: chopped fresh cilantro or green onions

Instructions

  1. Cut chicken into uniform 1.5-inch cubes and pat dry with paper towels.
  2. In a medium bowl, whisk together honey, sriracha, soy sauce, olive oil, lime juice, minced garlic, and black pepper until smooth and glossy.
  3. Add chicken cubes to the marinade, stir well to coat, cover, and refrigerate for at least 20 minutes up to 2 hours.
  4. Preheat grill to medium-high heat (around 400°F). If using charcoal, wait until coals are covered with gray ash.
  5. Thread marinated chicken pieces onto skewers, leaving space between pieces for even cooking.
  6. Grill skewers for 4-5 minutes per side, turning once, until grill marks form and internal temperature reaches 165°F. Brush with leftover marinade frequently but avoid flare-ups.
  7. Remove skewers from grill and let rest for 5 minutes.
  8. Garnish with chopped cilantro or green onions before serving.

Notes

Soak wooden skewers for 30 minutes to prevent burning. Keep grill heat at medium-high to avoid burning the honey glaze. Marinate at least 20 minutes for best flavor but no longer than 4 hours to prevent texture changes. When basting, brush quickly off direct flame to avoid flare-ups. Can be grilled indoors using a grill pan or broiler with close attention to avoid burning.
