Juicy grilled shrimp skewers slathered in a buttery garlic glaze, perfect for quick and flavorful outdoor cooking. This easy recipe features a simple garlic butter marinade with fresh herbs and lemon.

  • 1 pound large shrimp, peeled and deveined
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)
  • 4 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon fresh parsley, finely chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Transfer to a mixing bowl.
  2. In a small bowl, whisk together melted butter, minced garlic, lemon juice, smoked paprika, parsley, salt, and pepper.
  3. Pour the marinade over the shrimp and toss gently to coat evenly. Cover and let sit for 15-20 minutes at room temperature.
  4. Thread 4-5 shrimp per skewer, pushing them on straight but not too tight.
  5. Preheat grill or grill pan to medium-high heat (375-400°F).
  6. Place skewers on the grill and cook for 2-3 minutes per side until shrimp turn pink and opaque with charred edges.
  7. While grilling, baste shrimp with any remaining garlic butter marinade.
  8. Remove skewers from grill and let rest for a couple of minutes.
  9. Serve immediately with extra lemon wedges.

Notes

Do not marinate shrimp longer than 30 minutes to avoid texture changes. Soak wooden skewers for 30 minutes before grilling to prevent burning. If shrimp curl too much, pierce through tail and body to keep straight. Watch shrimp closely while grilling to avoid overcooking.
