A quick and easy summer recipe featuring grilled nectarines caramelized with honey glaze and paired with creamy burrata cheese for a perfect balance of sweet, smoky, and creamy flavors.

  • 4 ripe but firm nectarines, halved and pitted
  • 8 ounces fresh burrata, drained
  • 3 tablespoons raw honey
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves, chopped (optional)
  • Pinch of sea salt
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Rinse and dry the nectarines. Cut them in half and remove the pits. Brush the cut sides lightly with olive oil to prevent sticking and help caramelization.
  2. In a small bowl, whisk together the honey, fresh lemon juice, and chopped thyme. Set aside.
  3. Preheat your grill or grill pan to medium-high heat, around 375°F (190°C). Make sure the grates are clean and well-oiled to avoid sticking.
  4. Place nectarines cut side down on the grill. Grill for about 3-4 minutes until grill marks appear and the fruit softens slightly but still holds shape. Flip and grill the skin side for another 2 minutes.
  5. Remove nectarines from grill and place cut side up on a serving platter. Drizzle the honey glaze generously over each half while they’re still warm.
  6. Tear the burrata into chunks or leave whole and nestle it around or on top of the nectarines.
  7. Sprinkle a pinch of sea salt and freshly ground black pepper over the top. Garnish with a few fresh thyme leaves if desired.

Notes

If nectarines are very ripe and soft, grill for less time to avoid mushiness. Let burrata sit out for 10 minutes before serving for perfect creaminess. Toasted nuts like pistachios or almonds can be added for crunch. If no grill is available, broil nectarines in the oven watching closely to avoid burning. Oil grill grates well to prevent sticking.
