A quick and easy summer appetizer featuring toasted baguette topped with creamy burrata, juicy peach slices, salty prosciutto, fresh basil, and a spicy hot honey drizzle.

Ingredients

Scale
  • 2 medium ripe peaches, thinly sliced
  • 8 ounces burrata cheese, drained and torn into pieces
  • 4 ounces prosciutto, thinly sliced
  • 1 loaf baguette or crusty Italian bread, sliced into 1/2-inch thick pieces
  • 2 tablespoons extra virgin olive oil, for brushing bread
  • 3 tablespoons hot honey (store-bought or homemade with honey and chili flakes)
  • A handful fresh basil leaves, chiffonade or roughly torn
  • Freshly cracked black pepper, to taste
  • Sea salt flakes, for finishing (optional)

Instructions

  1. Preheat your oven to 400°F or heat a grill pan over medium-high heat.
  2. Slice the baguette into 1/2-inch thick pieces. Brush each slice lightly with extra virgin olive oil on both sides.
  3. Toast the bread slices on a baking sheet or grill pan for about 3-4 minutes per side until golden and crisp but still tender inside.
  4. While the bread is toasting, thinly slice the peaches carefully to avoid mushiness.
  5. Tear the burrata into bite-sized pieces and set aside.
  6. Once the bread is toasted and slightly cooled, layer burrata pieces evenly on each slice.
  7. Top with peach slices, then drape thin ribbons of prosciutto over the top.
  8. Add fresh basil leaves for color and flavor.
  9. Warm the hot honey slightly if thick (about 10 seconds in microwave) and drizzle generously over each bruschetta slice.
  10. Finish with freshly cracked black pepper and sea salt flakes to taste.
  11. Serve immediately for best texture and flavor.

Notes

Brush bread lightly with olive oil to achieve a golden, crisp crust. Assemble bruschetta just before serving to keep bread crunchy. Warm hot honey slightly to drizzle easily but avoid overheating to maintain viscosity. Burrata should be torn gently and kept at room temperature for 10 minutes before assembling for best flavor. Fresh cracked black pepper and sea salt flakes enhance flavor and texture contrast.
