Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice about 6 cups of ripe peaches. Toss them gently in a large bowl with 3/4 cup granulated sugar, 2 tablespoons brown sugar, 1 tablespoon lemon juice, 2 tablespoons cornstarch, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg if using.
  3. Pour the peach mixture into a greased 8×8-inch baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt. Add 6 tablespoons melted butter and stir until combined.
  5. Pour in 1 cup milk and 1 teaspoon vanilla extract, stirring gently just until the batter comes together. Do not overmix.
  6. Spoon or gently pour the biscuit batter over the peach filling. It will not cover the peaches completely.
  7. Bake in the preheated oven for 35-40 minutes until peach juices bubble and the biscuit topping is golden and fluffy. Tent with foil if topping browns too quickly.
  8. Let the cobbler rest for 10-15 minutes before serving to allow the filling to set.
