Ingredients

Scale
  • 2 ½ cups (312 g) all-purpose flour
  • 1 tablespoon baking powder
  • ¼ cup (50 g) sugar
  • ½ teaspoon salt
  • ½ cup (113 g) cold unsalted butter, cubed
  • 1 cup (150 g) fresh strawberries, hulled and diced
  • ¾ cup (180 ml) heavy cream
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 large egg
  • For the glaze:
  • 1 cup (120 g) powdered sugar
  • 23 tablespoons (3045 ml) milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the cold, cubed butter to the flour mixture. Cut the butter into the flour using a pastry cutter or two knives until the mixture resembles coarse crumbs with some pea-sized bits of butter.
  4. Gently fold in the diced strawberries, being careful not to crush them.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until combined.
  6. Pour the wet mixture into the dry ingredients. Fold gently with a spatula just until the dough starts to come together. If too dry, add a tablespoon more cream; if too wet, add a bit more flour.
  7. Turn the dough onto a lightly floured surface and pat into a 7-inch (18 cm) circle about 1 inch (2.5 cm) thick. Avoid kneading.
  8. Cut the circle into 8 equal wedges and transfer them to the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean.
  10. Let scones cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  11. Prepare the glaze by whisking powdered sugar, milk or cream, and vanilla extract until smooth and pourable.
  12. Drizzle the glaze over the cooled scones and let set before serving.

Notes

Keep butter cold and work quickly to maintain flaky texture. Pat strawberries dry if they release too much juice to avoid soggy scones. Do not overmix dough to keep scones tender. Use fresh baking powder for best rise. Glaze after scones have cooled. For gluten-free, substitute with almond flour blend; for dairy-free, use coconut cream and vegan butter.
