  • 1 pint (about 250 grams) grape or cherry tomatoes
  • 8 ounces (225 grams) fresh mozzarella balls (bocconcini)
  • About 20 fresh basil leaves
  • 3 to 4 tablespoons balsamic glaze (store-bought or homemade)
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • About 20 wooden or bamboo skewers, 4 inches long

Instructions

  1. Rinse grape tomatoes and basil leaves gently under cold water. Pat dry with paper towels. Drain mozzarella balls well to avoid excess moisture.
  2. Optional: Make balsamic glaze by pouring 1 cup (240 ml) balsamic vinegar into a small saucepan. Add 1 tablespoon honey or sugar. Simmer over low heat, stirring occasionally until reduced to about 1/4 cup (60 ml) and syrupy. Let cool.
  3. In a mixing bowl, lightly toss tomatoes with a pinch of salt, black pepper, and olive oil if using.
  4. Assemble skewers by threading one tomato, followed by a folded basil leaf, then a mozzarella ball. Repeat until all ingredients are used, aiming for 3 pieces per skewer.
  5. Arrange skewers on a serving platter and drizzle generously with balsamic glaze. Add extra cracked pepper if desired.
  6. Serve immediately for best freshness and texture. If needed, cover and refrigerate for up to 2 hours before serving.

Notes

Use small-curd mozzarella balls for best texture. If fresh basil is unavailable, baby spinach can be substituted. For vegan option, use plant-based cheese balls or marinated tofu. Skewers can be grilled briefly for smoky flavor but watch cheese melting. Assemble skewers close to serving time and drizzle glaze just before serving to keep fresh. Store leftovers in airtight container refrigerated up to 24 hours.
