  • 1 large English cucumber, sliced into 1/4-inch thick rounds
  • 1/2 cup hummus (classic garlic or roasted red pepper flavor recommended)
  • 1 everything bagel, toasted and crumbled
  • 1 tablespoon extra virgin olive oil (optional, for drizzling)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon fresh dill or parsley, finely chopped
  • Sea salt and black pepper, to taste

Instructions

  1. Rinse and dry the cucumber well. Slice into 1/4-inch thick rounds and set aside on a paper towel to absorb excess moisture for about 5 minutes.
  2. Cut the everything bagel into quarters, then toast in a toaster or under the broiler until golden and crispy (about 2-3 minutes). Let cool slightly, then crumble into bite-sized pieces.
  3. Optional: In a small bowl, stir the hummus with lemon juice and a drizzle of olive oil to brighten the flavor.
  4. Spread about a teaspoon of hummus on each cucumber slice using a spoon or small spatula.
  5. Sprinkle a generous pinch of everything bagel crumbs over each hummus-topped cucumber slice.
  6. Lightly sprinkle chopped fresh dill or parsley over the top, then season with sea salt and freshly ground black pepper to taste.
  7. Serve immediately to keep cucumber crisp and bagel crunch intact. If needed, keep chilled on a platter for no more than 30 minutes before serving.

Notes

Pat cucumber slices dry to prevent sogginess. Toast bagel crumbs well for maximum crunch. Assemble bites just before serving to keep texture fresh. For gluten-free, substitute bagel crumbs with gluten-free bread crumbs or crushed nuts. For vegan, use plant-based hummus and skip cheese additions.
