A quick and easy 5-ingredient recipe featuring creamy avocados stuffed with a fresh, zesty cowboy caviar mix of black beans, corn, tomatoes, and herbs. Perfect for a healthy, satisfying meal or snack.

  • 2 ripe but firm avocados, halved and pitted
  • 1 cup canned black beans, rinsed and drained
  • 1 cup fresh corn kernels (or thawed frozen corn)
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: pinch of cumin or chili powder

Instructions

  1. Slice the avocados in half lengthwise and carefully remove the pits. Optionally scoop out about a tablespoon of avocado flesh from each half and set aside.
  2. In a medium bowl, combine the rinsed black beans, corn kernels, quartered cherry tomatoes, diced red onion, chopped cilantro, and reserved avocado flesh if using.
  3. Pour in the fresh lime juice and olive oil. Sprinkle salt, pepper, and optional cumin or chili powder. Toss gently but thoroughly to combine.
  4. Using a spoon, generously fill each avocado half with the cowboy caviar mixture, mounding it slightly.
  5. Arrange the stuffed avocados on a plate and serve immediately for the freshest experience.

Notes

To prevent avocado browning, toss avocado halves with lime juice and store separately from filling until serving. Rinse and drain canned beans well but keep some moisture for better dressing cling. Use cherry tomatoes quartered evenly to avoid sogginess. Stuff avocados moderately to avoid filling spillover. The filling can be made a day ahead and refrigerated, but stuff avocados just before serving.
