A visually striking and refreshing summer appetizer featuring watermelon, feta cheese, and fresh mint arranged in a festive flag pattern. Perfect for summer gatherings with no cooking required.

  • 4 cups seedless watermelon, cut into thick, even slices or triangles
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped or whole small leaves
  • 1 tablespoon extra virgin olive oil (optional)
  • A pinch freshly cracked black pepper
  • Light sprinkle sea salt or flaky salt
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Wash the watermelon thoroughly. Using a sharp chef’s knife, slice off the rind and cut the flesh into thick, even strips about 1 inch wide and 4-5 inches long. Arrange these neatly on your serving board in a rectangular layout.
  2. Crumble the feta cheese into small chunks or fine pieces. Carefully place the crumbled feta in parallel lines between the watermelon strips to mimic the white stripes of the flag.
  3. Scatter fresh mint leaves or small chopped pieces over the area representing the blue section of the flag (top left corner), using about a quarter of your mint leaves.
  4. Lightly sprinkle sea salt and freshly cracked black pepper over the entire board. Optionally, drizzle extra virgin olive oil over the watermelon and feta. Finish with a thin drizzle of balsamic glaze if desired.
  5. Check the board visually to ensure the flag pattern is clear and ingredients are evenly distributed. Let the board sit at room temperature for 5-10 minutes before serving to allow flavors to mingle gently.

Notes

Keep watermelon chilled until just before assembling to maintain crispness. Crumble feta right before assembling to keep it fresh and creamy. Add mint and drizzle dressings at the last minute to avoid wilting and sogginess. For vegan variation, substitute feta with plant-based cheese or marinated tofu. Can add a splash of balsamic glaze for extra flavor.
