Quick and easy garlic butter grilled shrimp skewers with a zesty lemon flavor, perfect for weeknight dinners or entertaining. Juicy shrimp grilled to perfection with a buttery, garlicky, and bright citrus finish.

  • 1 pound large shrimp, peeled and deveined (tail-on optional)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, finely minced
  • 1 large lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a small bowl, combine melted butter, minced garlic, lemon zest, half of the lemon juice, salt, and pepper. Stir well and set aside.
  3. Place shrimp in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly. Let sit for 10 minutes while soaking wooden skewers if needed.
  4. Thread shrimp onto skewers, piercing near the tail and then near the head, leaving space between each shrimp.
  5. Preheat grill to medium-high heat (about 400°F). Clean and lightly oil grates.
  6. Grill shrimp skewers for 2-3 minutes per side until pink and opaque with slight char marks.
  7. In the last minute of grilling, brush shrimp generously with garlic butter mixture and let it soak in.
  8. Remove from grill, squeeze remaining lemon juice over skewers, and sprinkle with chopped parsley.
  9. Serve immediately while hot.

Notes

Avoid burning garlic by brushing garlic butter on shrimp in the last minute of grilling or off the heat. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Dry shrimp well before marinating for better sear and char. Can be cooked on stovetop grill pan or broiled if no grill is available.
