Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add the rolled oats, ground flaxseed, and a pinch of salt (if using). Stir to distribute evenly.
  2. Add the wet ingredients: Scoop in the peanut butter, drizzle in the honey, and add the vanilla extract.
  3. Mix everything together: Stir with a spatula, pressing down firmly to incorporate the peanut butter into the oats. Mix for about 2 minutes until a cohesive, slightly sticky dough forms. If too dry, add a teaspoon of honey or a splash of water. If too wet, add a tablespoon of oats.

  5. Chill the mixture: Place the bowl in the fridge for 15-20 minutes to firm up the dough.
