A quick, light, and flavorful meal featuring seasoned lean ground turkey wrapped in crisp lettuce leaves, perfect for a healthy taco alternative.

  • 1 lb lean ground turkey
  • 1 large head Romaine or Iceberg lettuce
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • Freshly ground black pepper, to taste
  • Juice of 1 lime
  • A handful fresh cilantro, chopped (optional)
  • 1/2 cup diced tomatoes or salsa
  • Avocado slices (optional)
  • Shredded cheese such as cheddar or Monterey Jack (optional)

Instructions

  1. Carefully separate the lettuce leaves from the head, rinse under cold water, and pat dry with paper towels. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat until shimmering but not smoking.
  3. Add the finely chopped onion and cook for 3-4 minutes until softened and translucent. Stir in the minced garlic for the last 30 seconds until fragrant.
  4. Add the ground turkey to the pan, breaking it up with a spatula. Cook for 6-8 minutes, stirring occasionally, until no longer pink and starting to brown.
  5. Sprinkle in cumin, smoked paprika, chili powder, salt, and pepper. Stir well to coat the turkey evenly. Cook for another 2 minutes to toast the spices.
  6. Stir in the diced tomatoes or salsa and cook for 2 more minutes to warm through.
  7. Remove the pan from heat and squeeze fresh lime juice over the turkey mixture. Toss in chopped cilantro and stir.
  8. Spoon the turkey mixture into each lettuce leaf. Add avocado slices and cheese if using. Serve immediately.

Notes

To prevent the turkey from drying out, add a splash of water or chicken broth during cooking if needed. Pat lettuce leaves dry before assembling to keep them crisp. For dairy-free, omit cheese or use plant-based alternatives. Ground chicken can be substituted for turkey.
