This creamy, protein-packed overnight oats recipe uses Greek yogurt for a thick, pudding-like texture. It’s a no-cook, meal-prep-friendly breakfast that keeps you full until lunch.

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries, sliced banana, chopped nuts, nut butter, dark chocolate chips, cinnamon or cocoa powder

Instructions

  1. Combine the dry ingredients: In a jar or container, add rolled oats, chia seeds (if using), and a pinch of salt. Stir to distribute.
  2. Add the wet ingredients: Pour in milk, Greek yogurt, maple syrup or honey, and vanilla extract.
  3. Stir thoroughly until no dry pockets remain, about 30 seconds.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk. If too thin, let sit longer or add more chia seeds.
  6. Add desired toppings just before eating.
  7. Enjoy cold or warm (microwave without lid for 45-60 seconds).

Notes

Use room temperature ingredients for smoother mixing. Taste the mixture before refrigerating to adjust sweetness. The oats keep in the fridge for up to 5 days; add a splash of milk if they thicken too much. Do not freeze.
