  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini), finely grated and excess moisture squeezed out
  • 1 cup (175 grams) semisweet chocolate chips
  • Optional: 1 teaspoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of a box grater. Place grated zucchini in a clean kitchen towel and gently squeeze out excess water.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder if using.
  4. In another bowl, whisk granulated sugar and vegetable oil until well blended. Add eggs and vanilla extract, mixing until smooth and glossy.
  5. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Avoid overmixing.
  6. Fold in the grated zucchini and chocolate chips evenly.
  7. Scrape the batter into the prepared loaf pan and smooth the top lightly.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs but no wet batter. Start checking at 50 minutes.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
