  • 1 large egg, room temperature

  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups (240g) powdered sugar
  • 2 tablespoons meringue powder
  • 34 tablespoons water
  • Black gel food coloring (optional)
  • 2430 candy eyeballs

Instructions

  1. Cream the butter and sugar: In a mixing bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes. Scrape down the sides halfway through.
  2. Add egg and vanilla: Add room-temperature egg and vanilla extract. Beat on medium speed until fully combined, about 1 minute.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, black cocoa powder, baking powder, and salt.
  4. Mix dry into wet: Add dry ingredients to wet mixture in two additions, mixing on low speed after each until just combined. Scrape down the bowl between additions. Do not overmix.
  5. Chill the dough: Wrap dough in plastic wrap and flatten into a disc. Refrigerate for at least 1 hour, or up to 3 days.
  6. Preheat and prep: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  7. Shape the cookies: Scoop tablespoons of dough (about 1.5 tablespoons each) and roll into balls. Place 2 inches apart on prepared sheets. Flatten each ball slightly to about ½ inch thick.
  8. Bake: Bake one sheet at a time in the center rack for 10-12 minutes. Cookies should look puffed and slightly cracked on top. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Make the royal icing: In a medium bowl, whisk together powdered sugar and meringue powder. Add 3 tablespoons water and whisk until smooth. Adjust consistency with additional water or powdered sugar as needed. Add a tiny drop of black gel food coloring if desired. Transfer to a piping bag or zip-top bag.
  10. Decorate the spiders: Once cookies are completely cool, pipe eight spider legs on each cookie (four on each side, curving outward). Pipe a small circle in the center for the body. Place two candy eyeballs on the wet icing. Let icing dry completely, about 2-3 hours at room temperature.
