  • 1620 whole cloves (optional)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon ground cinnamon (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry. Remove thick skin if present, leaving fat layer intact.
  3. Score the ham by making shallow diagonal cuts about 1/2 inch apart in a diamond pattern.
  4. Press whole cloves into the intersections of the diamond pattern (optional).
  5. Arrange pineapple rings on top of the ham, securing with toothpicks if needed.
  6. In a small saucepan over medium heat, combine brown sugar, bourbon, Dijon mustard, apple cider vinegar, and cinnamon. Stir constantly until sugar dissolves and mixture thickens slightly, about 5 minutes. Remove from heat.
  7. Place the ham on a roasting rack and brush generously with the bourbon brown sugar glaze.
  8. Tent loosely with aluminum foil and bake for 1.5 to 2 hours, basting with glaze every 20 minutes. Remove foil in the last 30 minutes to allow glaze to caramelize and develop a sticky crust.
  9. Use a meat thermometer to ensure internal temperature reaches 130–140°F (54–60°C).
  10. Remove from oven and let rest for 15 minutes before slicing.
