This creamy slow cooker white chicken chili is the ultimate game day comfort food. With tender shredded chicken, white beans, and a velvety texture achieved by blending a portion of the chili, it’s completely hands-off and packed with bold, crowd-pleasing flavors.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (Great Northern or cannellini), drained and rinsed
  • 2 cans (4 oz each) green chiles, undrained
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 3 cups low-sodium chicken broth
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • 2 tablespoons fresh lime juice
  • 1 cup frozen or fresh corn
  • Optional toppings: shredded Monterey Jack cheese, fresh cilantro, diced avocado, sour cream, tortilla chips, sliced jalapeños

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker. Sprinkle the diced onion and minced garlic over the top.
  2. Sprinkle the cumin, oregano, salt, and pepper evenly over the chicken and onions. Add the green chiles on top (do not drain).
  3. Pour the chicken broth around the chicken (try not to wash the spices off). Add one can of the drained and rinsed white beans. Reserve the second can for later.
  4. Cook on low for 6-7 hours or high for 3-4 hours, until the chicken shreds easily with a fork.
  5. Carefully remove the chicken breasts to a cutting board and shred with two forks.
  6. Add the remaining can of drained white beans and the corn to the slow cooker. Using an immersion blender, blend about half the chili directly in the pot until smooth. (Alternatively, transfer about 2 cups of chili to a regular blender, blend until smooth, and stir back into the pot.)
  7. Stir the shredded chicken back into the creamy chili. Let it cook on low for another 10-15 minutes to heat through.
  8. Stir in the fresh lime juice. Taste and adjust salt and pepper if needed.
  9. Ladle into bowls and serve with desired toppings.

Notes

For a dairy-free version, skip the cheese and use dairy-free yogurt or avocado for creaminess. This recipe is naturally gluten-free—double-check your broth label. The chili tastes even better the next day as flavors meld. To thicken, blend more of the beans or let it cook uncovered for the last 30 minutes.
