A delicious and easy honey bourbon glazed ham with caramelized pineapple rings, perfect for holidays and family dinners. The glaze combines honey, bourbon, and spices for a sweet and savory flavor.

Ingredients

Scale
  • Bone-in smoked ham (about 6 to 8 pounds), fully cooked, spiral-cut
  • 1/2 cup honey
  • 1/4 cup bourbon (e.g., Maker’s Mark)
  • 1/2 cup packed brown sugar
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • About 12 whole cloves
  • 1 can pineapple rings (about 8 rings)
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup orange juice

Instructions

  1. Preheat your oven to 325°F (163°C). Line your roasting pan with foil for easier clean-up.
  2. Remove packaging from the ham and pat dry. Score the surface in a diamond pattern about 1/8-inch deep.
  3. Lay pineapple rings evenly over the ham, securing each with a whole clove in the center.
  4. In a small saucepan, combine honey, brown sugar, Dijon mustard, cinnamon, melted butter, and orange juice. Warm over medium heat, stirring until sugar dissolves and glaze is smooth (about 5 minutes). Remove from heat and stir in bourbon carefully.
  5. Place the ham on the rack in your roasting pan. Brush a generous layer of glaze all over the ham and pineapple rings.
  6. Bake uncovered for about 1 hour 15 minutes. Every 20 minutes, baste with more glaze. Tent loosely with foil if glaze starts browning too fast.
  7. Check for an internal temperature of 140°F (60°C) to ensure heated through.
  8. Rest the ham for 10 minutes before slicing to let juices redistribute.

Notes

Score the ham to help glaze soak in and create classic diamond patterns. Use a light hand with bourbon to avoid overpowering. Baste regularly for a sticky, glossy finish. Tent with foil if glaze browns too quickly. Rest before slicing for juicy meat. Glaze can be made ahead and warmed before use. For alcohol-free version, substitute bourbon with apple cider or pineapple juice.
