  • 4 ounces cream cheese, softened
  • 1/2 cup heavy whipping cream, chilled
  • 2 tablespoons powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Fresh berries (blueberries or raspberries) for decorating (optional)
  • Mint leaves for garnish (optional)

Instructions

  1. Using a sharp knife, slice the seedless watermelon into a 3-inch thick round. Trim edges slightly to create a flat cake surface. Pat dry with paper towels to remove excess moisture.
  2. Place the watermelon round on a plate and refrigerate for at least 30 minutes to help it hold its shape and stay cool during decorating.
  3. In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  4. In a separate chilled bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture to create a light, fluffy topping.
  6. Remove the watermelon from the fridge and spread the cream cheese topping evenly over the top and sides using a spatula. Smooth out or create soft peaks for texture.
  7. Decorate the cake with fresh berries and mint leaves.
  8. Refrigerate the assembled cake for at least 20 minutes before serving to set the topping and keep it fresh.

Notes

Use firm, seedless watermelon for best structure. Pat dry watermelon slices to reduce juice and prevent topping from sliding. Chill watermelon and topping separately before assembly.
