  • 1 kiwi, peeled and sliced

Instructions

  1. Make the Sugar Cookie Dough: In a large bowl, beat 1 cup softened butter and 1 cup sugar together until light and fluffy—about 3-4 minutes. Add 1 egg and 1 teaspoon vanilla extract, mixing until just combined. In a separate bowl, whisk together 2 ½ cups flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  2. Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture, mixing on low speed until a soft dough forms. It will be slightly sticky but should hold together well. If it feels too sticky, sprinkle a little more flour, but don’t overdo it or the crust will be tough.
  3. Press Dough into Pan: Lightly grease your 9×13-inch pan. Press the dough evenly into the pan, making sure to reach the edges and corners. Use your fingers to gently press the dough down, smoothing out any cracks. Aim for about ¼-inch thickness.
  4. Bake the Crust: Preheat oven to 350°F (175°C). Bake the crust for 15-18 minutes, or until the edges are golden brown and the center is set but not overbaked. Let the crust cool completely in the pan before adding the topping.
  5. Prepare the Cream Cheese Topping: In a medium bowl, beat 8 oz softened cream cheese until smooth. Add ½ cup powdered sugar and 1 teaspoon vanilla extract, mixing until combined. In a separate bowl, whip ½ cup heavy cream to soft peaks, then fold it gently into the cream cheese mixture.
  6. Spread Topping on Cooled Crust: Using an offset spatula, spread the cream cheese mixture evenly over the cooled cookie crust.
  7. Arrange the Fruit: Arrange the sliced strawberries, blueberries, and kiwi in a patriotic pattern on top of the cream cheese layer.
  8. Chill Before Serving: Refrigerate the assembled fruit pizza for at least 1 hour before serving to help the topping firm up and flavors meld.
