Soft, pillowy pumpkin chocolate chip cookies with a touch of sea salt. Quick and easy, ready in about 25 minutes, and perfect for fall gatherings.

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup pumpkin puree (100% pure, not pie filling)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 2 to 3 minutes. Scrape down sides halfway through.
  3. Beat in pumpkin puree, egg, and vanilla extract until combined. The mixture may look slightly separated; that’s normal.
  4. In a medium bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed just until no streaks of flour remain. Do not overmix.
  6. Fold in chocolate chips with a rubber spatula until evenly distributed. Dough will be soft and slightly sticky.
  7. Drop rounded tablespoons of dough (about 1.5 tablespoons each) onto prepared baking sheets, spacing 2 inches apart. Fit about 12 per sheet.
  8. Bake for 10 to 12 minutes, until edges are set and lightly golden. Centers will look soft.
  9. Immediately sprinkle a small pinch of flaky sea salt over each hot cookie.
  10. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely or serve warm.

Notes

For best results, use room temperature ingredients. If pumpkin puree is watery, blot with a paper towel before adding. Do not overmix dough. For softer cookies, bake closer to 10 minutes; for crisper edges, bake 12 minutes. Cookies taste even better the next day.
