A cozy, buttery, and garlicky pull-apart star-shaped bread that’s soft inside with a crisp edge, perfect for casual dinners or gatherings.

  • 3 ½ cups (420g) all-purpose flour, sifted
  • 2 ¼ tsp active dry yeast (one packet)
  • 2 tbsp granulated sugar
  • 1 cup (240ml) warm water, around 110°F (43°C)
  • ½ cup (120ml) whole milk, warmed
  • 4 tbsp (60g) unsalted butter, melted and slightly cooled
  • 1 tsp salt
  • ½ cup (115g) unsalted butter, softened to room temperature (for garlic butter filling)
  • 4 cloves fresh garlic, finely minced or grated
  • 2 tbsp fresh parsley, finely chopped (optional)
  • 2 tbsp grated Parmesan cheese (optional)
  • Pinch of salt (to taste)
  • Pinch of freshly ground black pepper

Instructions

  1. Activate the yeast: Dissolve 2 tbsp sugar in 1 cup warm water (110°F/43°C). Sprinkle yeast over the surface and stir gently. Let sit until foamy and bubbly, about 5–10 minutes.
  2. Make the dough: In a large bowl, combine sifted flour and salt. Add warm milk, melted butter, and activated yeast mixture. Mix until a shaggy dough forms.
  3. Knead the dough: Transfer dough to a floured surface and knead until smooth and elastic, about 8–10 minutes. Alternatively, use a stand mixer with dough hook on medium speed for 8 minutes.
  4. First rise: Lightly oil a large bowl, place dough inside, turning once to coat. Cover and let rise in a warm place until doubled in size, about 1 hour.
  5. Prepare garlic butter: Mix softened butter, minced garlic, parsley, Parmesan, salt, and pepper in a small bowl. Adjust seasoning and set aside.
  6. Roll out dough: Punch down dough gently. Divide into four equal parts. Roll each into a 9-inch (23cm) circle on a floured surface.
  7. Assemble star bread: Place one dough circle on parchment-lined pan. Spread about 1/3 of garlic butter evenly. Repeat layering with next two circles, brushing each with garlic butter. Top with last circle without butter.
  8. Create star shape: Place a small cup in center of stacked dough. Cut dough into 16 equal strips from cup edge to dough edge. Twist two adjacent strips away from each other twice, pinch ends to form a point. Repeat all pairs.
  9. Second rise: Cover loosely and let rise until puffy, about 30 minutes.
  10. Bake: Preheat oven to 350°F (175°C). Bake bread for 25–30 minutes until golden brown. Tent with foil if top browns too fast.
  11. Cool and serve: Let bread cool 10 minutes in pan. Brush with leftover garlic butter for extra shine and flavor.

Notes

Use fresh garlic for best flavor. Keep knife sharp for clean cuts. If top browns too quickly, tent with foil halfway through baking. For gluten-free, substitute with gluten-free flour blend; for dairy-free, use plant-based butter and milk. Dough can be prepared ahead and refrigerated overnight. Twist dough strips firmly but gently to maintain shape.
